kitchen Christmas Ham (Tis The Season!)

It was my ex partner who introduced me to this way of doing it, and i swear -aside from the big turkey dinner itself, this is the best thing to nibble on over the season!!

Ingredients:
*approx 4kg Ham (unboned by the butcher is always easiest and best way!)
(When Boiling the ham, it is a good idea to add Clove studded Oranges, bay leaves, black peppercorns, and maybe an onion to infuse the plain water with some taste)
*approz 100g Brown Sugar (or demerera sugar)
*Approx 6TbSP of Mustard
*Cloves

(all ingredients are approx due to how big your ham is, if you prefer it more sweet or more of a tang.)

Method
1. Put the ham in a large saucepan and pour on enough cold water to just cover the ham. Add the extra flavourings if required. Bring to the boil, turn down to a simmer and cook for 3 hours. Keep an eye on the ham as sometimes it may need topping up with boiling water to keep it all in water and to scoop out the impurities (looks like white frothy stuff!). Allow it to cool a little, then remove from the pan.

2. Heat oven to 180C/160C fan/gas 4. Place the drained ham into a roasting tin and cover with tin foil and bake for 3hours.

3. Remove the ham from the oven and turn the heat up to 200C/180C fan/gas 6. You need a sharp knife to carefully slice the rind off the ham, leaving about 1-2 cm of fat left on. Cut diamond-shaped pattern into this. In a small bowl, mix together the sugar and mustard, then rub all over the ham. If you like cloves this is where you add them at each diamond point of the ham. if you dont like them, jsut leave them out. Roast for 30 mins until the ham is tender and the outside nice and sticky.

Seriously -THE best ham ever, the thin sweet rind around a good ham, is just the ultimate nibble during the season!!
